So does that mean that if a packaged cheese only contains vegetarian enzymes, it does not need a hechsher? For example, would these cheeses be ok to eat even though they do not have a hechsher?
yes. these are good.

1. Organic valley muenster cheese slices – Organic Cultured Pasteurized Milk, Salt, Vegetarian Enzymes, Organic Annatto.
2. Organic valley stringles – Organic cultured pasteurized part skim milk, salt, vegetarian enzyme.
3. Organic valley cheddar- Organic Cultured Pasteurized Milk, Salt, Microbial Enzymes.
